If a carrot cake and an oatmeal cookie met, fell in love, and had babies, they would be these cookies! They taste like carrot cake, but, well, better. More portable at least! I start with my spiced oatmeal cookie recipe and stuff it with shredded carrots, nutty pecans and golden raisins. Then I drizzle a sweet cream cheese flavored glaze on top. No wonder they’re every bunny’s fave.
